How to Make Jellof Rice
Ingredients:

4 cups of rice
·
5 medium size fresh tomatoes (blended or sliced)
·
5 fresh pepper (blended)
·
2 medium size onion (sliced)
·
1 medium sized ginger (peeled and blended)
·
1 tbsp. garlic powder
·
1 tbsp. thyme
·
2 tbsp. curry
·
1 small tomato paste
·
4 cooking spoons of vegetable oil
·
4 seasoning cubes
·
Salt to taste
·
Bay leaf (optional)
Step 1 Cook the meat and set aside
·
You need meat stock gotten from chicken/turkey/beef
for cooking.
·
Use the vegetable oil used for frying your meat
for the cooking. It gives more taste to the rice.
Step 2

Boil hot water in a separate pot, pour it into
the uncooked rice in a bowl. Cover and leave for 5 minutes and wash with cold
water. Drain in a sieve and set aside.
Step 3:

In a preheated pot, pour in the vegetable oil.
Add the sliced onions and stir, gently add the sliced tomatoes, pepper. Stir
fry for 5 minutes. You will notice that the vegetable oil is coming to the top.
Add the tin tomato paste and stir fry some more until the vegetable oil
separates from the tomato paste even more. Add the curry powder, thyme, garlic
powder, seasoning cubes and a bit of salt to taste and mix in properly. Add the
bay leaves.
Step 4

Pour the rice into the stew pot, mix together
thoroughly and add two cups of meat stock to it. Taste for salt and seasoning.

Cover the lid and allow the heat process going
on inside to cook the rice.

Garnish with green peas and sweet corn
serve with Chicken, Enjoy!
